It pours. Oh my, did it pour. We got three and a half inches of rain in about three hours. It started raining about 7:00 am and by 8:00 am, our basement, rock/gravel/dirt that it is, was taking on water in massive quantity. It is drained away again, but now it’s a muddy mess of gigantic proportions. This afternoon, after capturing their elbow grease in the kitchen for a deep clean, we headed outside for a bit of ditch wading. I’m told that’s fun.
On days like today, when it’s wet and rainy and muddy, I have to set to a bigger project or I’ll go crazy. We set to washing down cabinets and appliances and counter tops and accomplished quite a bit. We set to work to use up some of the many cucumbers coming from the garden and made a grocery list for ingredients for making relish later this week. We are, three years later, about to run out of the giant batch of zucchini relish I made in 2013. I’m aiming for 16 pints this time around… last time I made 70. Turns out, zucchini relish is pretty fabulous. Not exactly great sustenance should the economy turn south, but quite good. Here’s to hoping cucumber relish is equally well received.

Oh how we need rain. I sure hope we don’t get it that quickly. WOW!! We have only had about 3 inches in almost 8 weeks. Dean has had to water his garden every day except about 3 or 4. So hot and dry!
I made almost 50 pints of pickles but haven’t heard of relish. Also grated about 16 cups of zucchini yesterday to freeze. Had to use it before it ruined. First time in years he has planted it. The last time something ruined the vines and we got nothing.
I have made some chocolate coconut zucchini bread and need to make more and freeze it.
Looks like it is fun to wade the puddles. HA!
