Today I baked 251 cookies.
Yeah. I’m still not sure how that happened.
Liberty mixed the chocolate chip ones. We planned to give them as Valentines. Five of the kids are exchanging them, and we needed 65 cookies total. Liberty looked at the recipe that didn’t state how much it made and decided 3 batches would be needed, just to be safe. I reminded her it’s a big batch. She said she’d eat the extras.
My 8-quart mixer wanted none of it. She had to finish by hand… in my 13-quart bowl.
I do believe I’ve finally found a way to make skin and bones Liberty put on a few pounds. Three batches made 213 cookies. I stopped baking at 120 and froze the rest.
I also had agreed to make sugar cookies for fruit pizzas for the 4th grade party, since that’s the the class that I teach. A triple batch of that recipe makes 38 large heart-shaped cookies.
I’m not entirely sure what else I did today. School. A few loads of laundry and a whole lot of dishes.
I just realized I never even tried the chocolate chip cookies. Pretty sure they are good. The kids to full advantage of the bounty and volunteered to eat many. They ate lots.

Now that is ALOT of cookies. HA!! I have never mixed up that much of 1 kind of cookie before. I do make cookie balls and flash freeze them to have when I want to cook a few. It is so nice to have them for a quick treat. You were really a busy woman yesterday.
